Croque Monsieur

Ingredients
- 20 gram butter softened
- 1 tbsp flour
- 125 milli liter milk
- 40 gram Gruyere or swiss cheese coarsely grated
- 40 gram cheddar coarsely grated
- 4 slices bread buttered
- 1 tbsp Dijon mustard
- 150 gram ham shaved
Instructions
- Melt the butter in a saucepan.
- Add flour and cook until slightly grainy.
- Remove from heat and add milk.
- Return to heat and cook stirring until sauce boils and
thickens.
- Remove from heat and stir in half of both cheese until
melted and mixture combined.
- Put the 4 slices of the bread under the grill until
lightly toasted.
- Spread half the bread toasted side up with the cheese
sauce. Top with ham, and remaining cheese.
- Place rest of the bread on top with toasted side
down.
- Cook sandwich on grill on both sides.
