100 gram baking chocolate melted
2 egg separated
3 tbsp sugar
200 milli liter cream whipped
Instructions
Mix egg yolks with 2}} of sugar until it becomes bright.
Add melted chocolate and mix well.
Add \num1/3} of the whipped cream and mix.
Carefully mix in the remaining whipped cream using a silicone scraper.
Stiffen egg whites with a pinch of salt in separate bowl. Careful that everything touching the egg whites is cleaned and free of cream.
Add 1}} sugar to the egg whites and continue mixing.
Carefully mix in the egg whites in the chocolate mixture using the silicone scraper.
