Mousse au chocolate

Ingredients

  • 100 gram baking chocolate melted
  • 2 egg separated
  • 3 tbsp sugar
  • 200 milli liter cream whipped

Instructions

  1. Mix egg yolks with 2}} of sugar until it becomes bright.
  2. Add melted chocolate and mix well.
  3. Add \num1/3} of the whipped cream and mix.
  4. Carefully mix in the remaining whipped cream using a silicone scraper.
  5. Stiffen egg whites with a pinch of salt in separate bowl. Careful that everything touching the egg whites is cleaned and free of cream.
  6. Add 1}} sugar to the egg whites and continue mixing.
  7. Carefully mix in the egg whites in the chocolate mixture using the silicone scraper.
