Puffy Omelet

Ingredients
- 3 eggs
- 1.5 tbsp water
- 3 tbsp butter
- parsley
Instructions
- Separate eggs.
- Combine yolks and water. Season with salt and pepper.
- In a separate bowl beat egg whites until stiff but not
dry.
- Carefully fold egg whites into yolk mixture.
- Heat butter in a frying pan.
- Pour mixture into pan and leave until set and golden on
the bottom.
- Place the omlette under the hot grill until set.
- Garnish with parsley.
The omelet can be topped with various toppings: - Heat some
cut spring onions and halved cherry tomatoes with some olive
oil on medium heat just until slightly soft. - Grated
cheese.
