Spiced Choc Coffee Loaf

Ingredients

Icing:

  • 1 1/2 cup icing sugar mixture
  • 30ml espresso

Filling:

  • 250g dark chocolate, melted
  • 50g unsalted butter, melted
  • 1/2 cup brown sugar, firmly packed
  • 1 tbs mixed spice

Dough:

  • 3/4 cup milk
  • 7g sachet dried yeast
  • 1/3 cup caster sugar
  • 3 1/3 cup plain flour
  • 3 free range eggs
  • 1 tsp sea salt flakes
  • 125g unsalted butter, cubed, softened

Instructions

  1. To make the dough, combine milk, yeast and sugar in a small bowl. Stand for 10 minutes. Place milk mixture, flour, egg and salt flakes in the bowl of a stand mixer. Using a dough hook, knead mixture for 3 minutes or until combined. Add butter, one piece at a time, and knead for 5 minutes or until combined.
  2. Place dough in a clean bowl. Cover and rest for 1 hour or until almost doubled in size. Preheat oven to and line a 13 x 24cm (7cm deep) loaf pan with baking paper. 3.Combine filling ingredients in a bowl. 4.Halve dough. Roll each half on a floured surface until 30 x 45cm. Spread with filling, leaving a 2cm border. Roll up tightly from short edge. Cut each log in half lengthways, then twist to make 2 logs. Twist twisted logs together to make 1 log. 5.Place log in pan and bake for 45 minutes or until golden. Stand until cool enough to handle, then remove from pan. Combine icing ingredients in a bowl and drizzle over loaf. Serve.

Notes

  • You can also do the dough the night before and let rise over night.
  • You can also use a pesto filling for a savoury version.
