Summer tomato and bocconcini pasta

Ingredients

  • 350 gram pasta cooked
  • 100 gram prosciutto slices
  • 180 gram boconcini mini
  • 350 gram cherry tomatoes
  • 2 garlic cloves
  • 2 tbsp lemon
  • 1 tbsp olive oil
  • 1 tbsp oregano
  • 1 tbsp basil
  • fresh basil chopped

Instructions

  1. Fry the prosciutto over high heat in batches for range 2-4 min until crisp. Set aside.
  2. Heat the olive oil, lemon, oregano, and basil in the frying pan.
  3. Add garlic and tomatoes.
  4. Put cooked pasta, prosciuto and the marinated tomatoes on plates and arrange bocconcini on top.
  5. Heat the plates in the oven for range 2-5 min on grill.
  6. Sprinkle the fresh basil on top.
