Tomato Coconut Wok

Ingredients
- 1 cup rice
- 4 clove garlic finely chopped
- ginger finely chopped
- 1 onion chopped
- 500 gram chicken diced
- 140 gram tomato paste
- 200 gram coconut cream large can
- 1 zucchini cut in small strips
- lime
- chinese rice wine
- cayenne pepper
- cumin freshly ground
- curry powder
- cooking sake
Instructions
- Fry chicken on high in small batches until a bit brown and
set aside.
- Reduce heat to medium. Fry onion, garlic, ginger.
- Add curry powder, cayenne pepper, and cumin.
- Add zuchini and the cooking sake.
- Add tomato paste and fry for a few minutes.
- Add coconut milk, chinese rice wine, lime juice and the
fried chicken pieces. Then, cook for 10}}.
Add some water at the end if the sauce is too thick.
