1.2.1 Croque Monsieur

Ingredients

| 20 | g | butter | softened |
| 1 | tbsp | flour |
| 125 | ml | milk |
| 40 | g | Gruyere or swiss cheese | coarsely grated |
| 40 | g | cheddar | coarsely grated |
| 4 | | slices bread | buttered |
| 1 | tbsp | Dijon mustard |
| 150 | g | ham | shaved |

Instructions
- Melt the butter in a saucepan.
- Add flour and cook until slightly grainy.
- Remove from heat and add milk.
- Return to heat and cook stirring until sauce boils and thickens.
- Remove from heat and stir in half of both cheese until melted and
mixture combined.
- Put the 4 slices of the bread under the grill until lightly toasted.
- Spread half the bread toasted side up with the cheese sauce. Top
with ham, and remaining cheese.
- Place rest of the bread on top with toasted side down.
- Cook sandwich on grill on both sides.
