Ingredients

| 30 | g | butter | |
| 2 | clove | garlic | crushed |
| 1 | | onion | chopped (optional) |
| 3 | | leeks | sliced |
| 1 | kg | potatoes | peeled and diced |
| 1.5 | l | stock (chicken or vegetable) |
| 185 | ml | cream |
| 1 | tsp | salt |
| 1/2 | tsp | pepper |

Instructions
- Melt butter in large pot over medium heat.
- Add garlic, onion, and leek and sautee until soft
- Add potatoes and broth and bring to simmer.
- Let simmer for 25 min or until potato is very soft.
- Puree with a stick blender until just smooth.
- Add salt and pepper and stir through cream.
Notes:
Use chives for garnishing. Croutons fit well.
