2.9.3 Okonomiyaki

Ingredients

| 6 | | spring onions |
| 150 | g | pork mince |
| 1.5 | cup | flour |
| 1 | cup | chicken stock |
| 1.5 | cup | wombok | shredded |
| 2 | | eggs | lightly whisked |
| | | oil |
| 2 | tbsp | worcestershiresauce |
| 0.5 | cup | mayonnaise |

Instructions
- Place half the spring onion in a bowl of iced water. Set aside.
- Fry the mince on high heat, stirring with a wooden spoon to break
up any lumps, until cooked through. Transfer to a bowl.
- Mix flour, stock and eggs in a large bowl.
- Add the pork, 1 cup of the wombok and remaining spring onion
to the batter. Stir to combine.
- Make pancakes with the batter in a frying pan and cook until
bubbles appear on the surface.
- Turn and brush cooked surface with a little worcestershire sauce.
Cook until through. Turn and cook until surface caramelises.
- Transfer to a large plate and drizzle with mayonnaise. Top with
the remaining wombok and spring onion.
- Repeat with remaining dough.
